Designed to replicate the domed roof of traditional brick bread ovens, the unglazed stoneware cloche creates a depth of crust and crisp bake. Your bread dough sits inside the cloche for the second prove and when youre ready, pops into the oven to bake. The specially crafted domed lid traps steam and maintains an even baking temperature leaving the bread with a thick crispy crust and light inside. Rectangular shape also available (KCHMCLOCHEREC). The bread has a perfect raise, nice spring in the oven and a wonderful crust when I use this cloche. I don't bake bread without it! It helps if you lay baking paper in it to let your bread raise the second time, and also bake it. In this way you make sure the bread doesn't stick and you don't need to wash the cloche (contact with water is anyway not advised!!), so you protect your cloche perfectly.
